DescriptionPropyl acetate, also known as propyl ethanoate or 1-acetoxypropane, is a member of the class of compounds known as carboxylic acid esters. Carboxylic acid esters are carboxylic acid derivatives in which the carbon atom from the carbonyl group is attached to an alkyl or an aryl moiety through an oxygen atom (forming an ester group). Propyl acetate is soluble (in water) and an extremely weak basic (essentially neutral) compound (based on its pKa). Propyl acetate is a bitter, celery, and fruity tasting compound and can be found in a number of food items such as papaya, fig, pineapple, and cocoa bean, which makes propyl acetate a potential biomarker for the consumption of these food products. Propyl acetate can be found primarily in feces and saliva. Propyl acetate exists in all eukaryotes, ranging from yeast to humans.
